Breakfast Tortilla Pizza

Ingredients

  • 5 slices Food Club® Hickory Smoked Sliced Bacon, chopped
  • 4 (8-inch) flour tortillas
  • 1 1/2 tablespoons  Food Club® Olive Oil
  • 1/2 cup roasted red pepper hummus
  • 1 cup shredded Cheddar cheese
  • 4 large Fresh Harvest™ Grade A Large Eggs
  • 1 avocado, peeled, pitted and chopped
  • 1/4 cup Food Club® Mild Chunky Salsa
  • 2 tablespoons chopped fresh cilantro

Directions

  1. Adjust oven racks to top and bottom positions; preheat oven to 400°. In large skillet, cook bacon over medium-high heat 5 minutes or until crisp, stirring occasionally; transfer to paper towel-lined plate.
  2. Place tortillas on 2 rimmed baking pans; brush both sides with oil. Spread tortillas with hummus; sprinkle with cheese. Crack 1 egg in center of each pizza; bake 10 minutes or until egg whites are cooked through and yolks are slightly soft or to desired doneness, carefully rotating pans between upper and lower racks halfway through baking. 
  3. Serve pizzas topped with avocado, salsa, cilantro and bacon.
